Nothing is better than blueberry muffins in the morning! This recipe has just a few steps and is super easy so its perfect for any beginning baker. Just make sure you have a muffin/cupcake tin and some blueberries and you’re ready to go!
Makes 12-14 muffins
Ingredients
- ½ cup softened butter (1 stick)
- 1 ¼ cups granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups flour
- ½ teaspoon salt
- 2 teaspoons baking powder
- ½ cup milk
- 2 cups blueberries (washed and drained)
- 3 extra teaspoons of sugar (for topping)
Instructions
- Preheat the oven to 375°F
- Cream the butter and 1 ¼ cups sugar together until light. This is easiest to do with an electric mixer but can be done by hand
- Add the eggs one at a time, beating after each addition
- Add vanilla to mixture
- In a separate bowl; whisk together the flour, salt and baking powder
- Alternate adding the flour mixture and milk to the butter/sugar, starting and ending with the flour
- Crush ½ cup of blueberries with a fork and mix into the batter. Fold in the remaining whole berries with a spatula or spoon
- Line a muffin/cupcake tin with cupcake liners and fill with batter. Sprinkle the extra salt over the tops of the muffins
- Bake for 30-35 minutes
