Recipe: Blueberry Muffins

Nothing is better than blueberry muffins in the morning! This recipe has just a few steps and is super easy so its perfect for any beginning baker. Just make sure you have a muffin/cupcake tin and some blueberries and you’re ready to go!

 

Makes 12-14 muffins

  Ingredients

  • ½ cup softened butter (1 stick)
  • 1 ¼ cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup milk
  • 2 cups blueberries (washed and drained)
  • 3 extra teaspoons of sugar (for topping)

Instructions

  1. Preheat the oven to 375°F
  2. Cream the butter and 1 ¼ cups sugar together until light. This is easiest to do with an electric mixer but can be done by hand
  3. Add the eggs one at a time, beating after each addition
  4. Add vanilla to mixture
  5. In a separate bowl; whisk together the flour, salt and baking powder
  6. Alternate adding the flour mixture and milk to the butter/sugar, starting and ending with the flour
  7. Crush ½ cup of blueberries with a fork and mix into the batter. Fold in the remaining whole berries with a spatula or spoon
  8. Line a muffin/cupcake tin with cupcake liners and fill with batter. Sprinkle the extra salt over the tops of the muffins
  9. Bake for 30-35 minutes
  10. Enjoy your delicious muffins!
