“Mom, you should blog about this.” Writing about food almost every day for the past week is catching on my family. Today I made tuna melts for lunch. Something magical happens when you heat the ingredients in this sandwich. Tuna on its own is not popular with my kids, in fact, they say they don’t like tuna; same goes for cheddar cheese. A hot sandwich comes alive and satisfies from “bouche” to tummy. We’ve had tuna melts for lunch and dinner. Today I used Trader Joes albacore packed in water for the first time. It’s a good value.
One small can of tuna will make two sandwiches. Drain the tuna, add a tablespoon of mayo and ground pepper. Lightly butter one side of the sliced bread (or spray lightly with Pam/canola oil, I use Spectrum brand High Heat Canola Oil Spray). Carefully spread the tuna and top with sliced cheddar. From here you can use a Panini appliance or cook on medium heat in a covered frying pan for three minutes or so on each side. Today I served these with sliced oranges from my friend’s downtown Benicia tree. It was a nice contrast and prompted the comment I used to begin this blog post!
P.S. For protein, add sliced hardboiled eggs to the mixture and a little salt.
