It’s always helpful to have quick food available in a pinch. I rarely buy pre-made food, but while shopping with a friend last week at Costco, I was encouraged to try a new product. It’s called “Veggie Meatballs”, made by Don Lee Farms. Being the most scrutinizing member at the dinner table, I was pleasantly surprised and glad I bought it. The rest of the family ate them somewhat reluctantly, but they are spoiled.
Now that Taco Bell has some answering to do with their meat, I can make a stronger argument for this 100% vegetarian and delicious product. At 26 calories per piece, I recommend them to anyone still sticking to a New Year’s resolution….
I served them on a bed of thin spaghetti tossed in light butter, parsley and parmesan. Cost per piece is 14 cents. You get 64 pieces per box which is enough for a few meals. These would make nice appetizers too. They take 5 minutes to prepare.
