Recipe blogs are back! We know you missed them, and we are here to deliver. Today we bring you one of our favorite recipes; New York Style Coffee Cake. This is the perfect cake recipe because it is also acceptable to eat for breakfast, which is the best type of cake. The sour cream makes it perfectly moist, and the crumb topping is DELICIOUS. You’ll see. The only tools you will need for this recipe are a mixer and a loaf pan.
BOLT’s Coffee Cake
Makes 1 Loaf
Ingredients:
Crumb Topping:
- ½ cup (packed) brown sugar
- ¼ cup granulated sugar
- 1 tbsp ground cinnamon
- ¼ tsp salt
- ½ cup (2 sticks) butter, melted
- 1 cup all-purpose flour
Cake:
- 1 cup all-purpose flour
- ½ tsp baking soda
- ¼ tsp baking powder
- ¼ tsp salt
- 6 tbsps (3/4 stick) butter, room temperature
- ½ cup granulated sugar
- 2 medium eggs (or 1.5 large eggs)
- ½ cup full-fat sour cream
- 1 tsp vanilla extract
- Optional: powdered sugar for topping
Instructions:
- First grease your loaf pan using cooking spray or butter/flour and preheat your oven to 350°F
- Make your crumb topping by mixing the brown sugar, granulated sugar, cinnamon, and salt together in a medium bowl. Stir in the melted butter and then gently mix in the flour using a fork. You want this mixture to turn into large crumbs, not a paste (which you will get from over-mixing). Once you have crumbs, set this bowl aside
- Make the cake: Start by whisking the flour, baking soda, baking powder and salt together in a bowl and then setting this dry mixture aside
- Using your mixer with a paddle attachment (not a whisk), beat your room temperature butter and granulated sugar together until smooth and creamy (about 2 minutes)
- Once your butter/sugar mixture is smooth, add in the eggs, sour cream and vanilla and beat on medium speed until incorporated. This mixture may look curdled but it’s okay, it will thicken when you add the dry ingredients. Scrape down the sides of your bowl as needed
- Turn your mixer to low and add in the dry ingredients. Only mix until the batter is smooth! Make sure to not overmix, your batter should be thick, creamy and sticky
- Spread the batter evenly into your loaf pan and top with the crumb topping. Using the back of a spoon, press the crumbs into the cake batter so they stick
- Bake your cake for 45-55 minutes, until a toothpick inserted into the center comes out clean. Baking times vary so begin checking your cake after 45 minutes
- When a toothpick comes out clean your cake is done! Let it cool for at least 30 minutes before cutting it and top with powdered sugar for some extra pizzaz. Enjoy your breakfast cake!!
