Buttermilk Makes It Good

My dear friend Ivy has shared many things with me during the 20 years we’ve known each other – one is her experience with baking.  Choosing recipes that have buttermilk almost guarantees it’s going to be delicious.  She says, “Whenever there is buttermilk, it always turns out moist.”  She’s right. 

Last weekend, on a brief stop for some milk for cereal, my husband inadvertently grabbed a half gallon of buttermilk.  Never one to let something go to waste, I started planning what I had time to make that would use buttermilk.  Being a Council meeting week, I knew I wouldn’t have time for baking.  What I do have are hungry children who can consume lots of pancakes without guilt.

Waking up early and cooking breakfast for my family may sound like work but it makes me feel good.  Plus, I am convinced they get better grades with a belly full of hearty breakfast.  I try to do it once a week.
