Burritos To Clear Out The Fridge

“What are we having for dinner tonight?” The call came in at 2 ish this afternoon. I knew there was a leftover ground beef/veggie mixture in the fridge that needed to be reinvented….
“Burritos.” Lately I’ve been surprised at what my family will consume if it’s rolled in a flour tortilla.
We play restaurant while I cook dinner and my daughter is the waitress. First, I tell her all the toppings available:
• cheese
• sour cream or plain yogurt
• salsa
• hot sauce
• lettuce
• beans (canned refried)
• Mexi-rice (homemade)
• ground beef (I don’t tell them there are veggies in it)
• tomatoes
• avocado
• red onion
Then, feeling empowered, she grabs a spiral notepad and sets out to take orders from our family members. I make an assembly line in the kitchen, fold and roll the tortillas so nothing falls out, and arrange them in a casserole dish carefully following her orders. After the last one is complete, I tuck them in a warm oven and put remaining toppings on the dining table along with my famous cabbage salad.
Another bargain dinner; this one was less than $2 per person and takes 45 minutes to prepare.
