What? Your Staff Doesn't Like Mayo?

A Healthy Alternative to Mayonnaise with Artichokes
Last week Lucky’s had artichokes for 69 cents each.  They are tasty.  It looks like a good year for artichokes and avocados – our signature produce!
Here is what I often serve with artichokes.  The kids love it and it’s easy on the arteries.  Plus, if they don’t eat the whole artichoke, they get the protein from the egg.  Rather than mayo, I give each person a ramekin filled with a sliced egg and vinaigrette poured on top.

  • 1 hardboiled egg per person
  • ¼ cup of apple cider vinegar
  • ¾ tsp of kosher salt (give or take)
  • ½ cup vegetable oil
  • pepper
  • parsley optional

Slice the eggs and put them in each ramekin.  I use an old glass jar with a lid to mix the rest before distributing to each ramekin.  Shake vinegar, salt, oil and pepper well and distribute among ramekins.  This recipe should be enough for 4 people.
I’m big on parsley so if you can get away with it, finely chop some and put on top of each ramekin mixture.  It’s a pretty contrast on the white and yellow egg.  Bon appétit.

  1. OK… I woke up this morning and was reviewing the day ahead before I got out of bed and came upon the inevitable question “what should I cook for dinner”. My next thought was: I’ll check Joanne’s blog for some inspiration! Funny what our 6 a.m. minds do! So tonight is a combination of steak with nice homemade marinade and those awesome Idaho fries I was lucky enough to enjoy New Year’s day with the Sanders clan! I do need to work on more veggies for the kids…
